Quinoa Salad

Quinoa Salad

A refreshing and nutritious quinoa salad packed with vegetables.

Ingredients:

  • 1 cup quinoa
  • 1 ½ cups water
  • 1 cucumber, diced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 small red onion, finely chopped
  • Juice of 1 lemon
  • 2 tablespoons olive oil
  • Salt and pepper to taste

 

 


 

Instructions:

  1. Rinse the quinoa thoroughly under cold water.
  2. In a medium saucepan, bring the water to a boil. Add the quinoa, reduce heat, cover, and simmer for 15-20 minutes or until the water is absorbed and the quinoa is tender. Fluff with a fork and let cool.
  3. In a large bowl, combine the cooked quinoa, diced cucumber, diced red bell pepper, diced yellow bell pepper, and chopped red onion.
  4. In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper. Pour the dressing over the quinoa mixture and toss to combine.
  5. Refrigerate the quinoa salad for at least 1 hour to allow the flavors to meld. Serve chilled.
